And now that they\u2019re in season, it is the perfect time of year to start munching down on more veggies \u2013 especially the dark, leafy greens. Raw vegetables \u2013 and particularly greens \u2013 are so important in your daily diet because they are rich in:<\/p>\n<ul>\n<li>digestive enzymes (that get killed in the cooking process)<\/li>\n<li>minerals like iron, calcium and magnesium, and vitamins like C, A and B (which also can get killed in the cooking process)<\/li>\n<li>fibre which is essential for bowel movements, and excreting excess hormones, cholesterol and toxins out of the body<\/li>\n<li>antioxidants and other phytonutrients that are important for liver function, good skin and hair, circulation, radiance and longevity \u2013 basically everything!<\/li>\n<\/ul>\n<p><img fetchpriority=\"high\" decoding=\"async\" src=\"http:\/\/vitaliahealthcare.ca\/blog\/wp-content\/uploads\/2018\/05\/salad-300x196.jpg\" alt=\"\" width=\"300\" height=\"196\" class=\"alignright size-medium wp-image-1468\" srcset=\"https:\/\/vitaliahealthcare.ca\/blog\/wp-content\/uploads\/2018\/05\/salad-300x196.jpg 300w, https:\/\/vitaliahealthcare.ca\/blog\/wp-content\/uploads\/2018\/05\/salad-768x501.jpg 768w, https:\/\/vitaliahealthcare.ca\/blog\/wp-content\/uploads\/2018\/05\/salad-624x407.jpg 624w, https:\/\/vitaliahealthcare.ca\/blog\/wp-content\/uploads\/2018\/05\/salad.jpg 850w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>Also, because vegetables are so low calories, they are a wonderful way to fill up your dinner plate if portioning out the complex cards\/proteins\/fats is important to you.<\/p>\n<p>The best part about salads is that you can constantly change up the ingredients and the dressings so they never get boring! You can also pop veggies and dressing in a wide-mouth mason jar and make it an easy meal to take to work or enjoy on the go.<\/p>\n<p>Here are some of my favourites:<\/p>\n<ol>\n<li>Spiced Roasted Cauliflower and Quinoa Tabbouleh:<br \/>\n<a href=\"http:\/\/westernliving.ca\/recipes\/2015\/01\/01\/spiced-roasted-cauliflower-quinoa-tabbouleh\">http:\/\/westernliving.ca\/recipes\/2015\/01\/01\/spiced-roasted-cauliflower-quinoa-tabbouleh<\/a>\/<\/li>\n<li>Shaved Root Salad:<br \/>\n<a href=\"https:\/\/www.alive.com\/recipe\/shaved-root-salad-crispy-lentils\/\">https:\/\/www.alive.com\/recipe\/shaved-root-salad-crispy-lentils\/<\/a><\/li>\n<li>Basil Goat Cheese Pasta Salad:<br \/>\n<a href=\"https:\/\/www.halfbakedharvest.com\/basil-goat-cheese-pasta-salad\/\">https:\/\/www.halfbakedharvest.com\/basil-goat-cheese-pasta-salad\/<\/a><\/li>\n<li>Spring Fattoush Salad:<br \/>\n<a href=\"http:\/\/www.dollyandoatmeal.com\/blog\/2014\/4\/28\/spring-fattoush-salad-w-a-creamy-sumac-pine-nut-sauce-and-wanting-something-more\">http:\/\/www.dollyandoatmeal.com\/blog\/2014\/4\/28\/spring-fattoush-salad-w-a-creamy-sumac-pine-nut-sauce-and-wanting-something-more<\/a><\/li>\n<li>Black Rice Sesame Salad:<br \/>\n<a href=\"https:\/\/www.mynewroots.org\/site\/2011\/05\/black-rice-is-the-new-brown-2\/\">https:\/\/www.mynewroots.org\/site\/2011\/05\/black-rice-is-the-new-brown-2\/<\/a><\/li>\n<p><\/p>\n<p><b>Finally, this salad is currently in my weekly rotation:<\/b><\/p>\n<li>Goat Cheese and Onion Salad:<br \/>\nIngredients:<br \/>\n&#8211; baby greens<br \/>\n&#8211; pea shoots<br \/>\n&#8211; \u00bd &#8211; 1 whole avocado<br \/>\n&#8211; \u00bc red onion<br \/>\n&#8211; \u00bc cup goat cheese (chevre)<br \/>\n&#8211; \u00bc cup dried cranberries<br \/>\n&#8211; dash of olive oil<br \/>\n&#8211; freshly cracked pepper<br \/>\n&#8211; \u00bd lemon<\/p>\n<p>Fill a salad bowl with several cups of baby greens and pea shoots. Slice up the avocado. Add to the salad. Slice up the red onion into thin, long pieces. Add to the salad. Sprinkle goat cheese onto the salad, as well as the cranberries. Drizzle the olive oil on top and squeeze half a lemon onto the salad as well. Add freshly cracked pepper to taste. Enjoy!<\/p>\n<p>While salads are delicious and raw vegetables are one of the most important parts of the daily diet, if raw vegetables upset your digestive tract and lead to unhappy poops, it is important to address this first with your healthcare provider before adding more to your plate.
